And that is what this dish is all about. I have looked for it in many other restaurants all over but this Mexican Restaurant El Tapatio in Newcastle is the only one that seems to get it right. And I go all over for the best food in the Seattle area, Bellevue, Kirkland, Renton, Mercer Island, and even way out in the sticks to Issaquah.
The dish is called Pollo al Carbon, and its perfect from beginning to end. The chicken is perfectly grilled and cooked until very tender. The spanish rice is incredibly flavorful and simply delicious. But in my opinion it is all about the sauce. It is cream based and flavored with a smoked jalapeno, which is also known as a chipotle pepper. Light pink in color but full of flavor, rich, smoky, tangy and perfect with the chicken and perfect to mix in with your rice.
As much as i can talk about and say how great it is, but the best way to find out is to go try it for yourself. I have recommended it to a lot of my friends and family members and have never been disappointed. Deliciously incredible.
