Before writing this article I did a quick survey here at my work and it was simply to answer which was their favorite egg dish, not for this week or last month but favorite egg dish ever. The results were not stunning to me I just wanted to prove it and made sure that my favorite egg dish was everyone’s favorite egg dish and the winner is: Eggs Benedict. I thought it would be scrambled or fried, not this upper class stuff, but oh well.
Had a talk with my wife about it and she knows the ins and outs of this, so here it goes. It is a toasted English muffin, smoky and crisp canadian bacon, a nicely poached egg or two if you are eating two and of course the extremely hard to get just-right world famous hollandaise sauce. It’s so simple but yet so hard to make. As I put myself through the journey of making it a home, I found out why and before I got it right I went through quite a few batches. And there is two simple secrets make sure that the butter that is being used is one hundred percent clarified, what does this mean. Use the clarified part. Put your butter over a hot water bath for a while until you see the butter actually into two parts the clearer part which floats to the top and the other stuff that settles to the bottom you just don’t need. The second secret make sure that when your lemon juice or vinegar whichever one you are using for acid, and eggs are “warmed up” before you start adding in a whole bunch of butter and make scrambled eggs instead. So once eggs and lemon are whisked together and you get a thick consistency throw in a couple of table spoons of the clarified butter and continue to whisk, this warms up the sauce and at this point you are able to add the butter more deliberately. Don’t forget to add your salt and pepper and a pinch of Tabasco and you are done.
It really is not that hard, so just keep focused and make sure that you have the right ingredients and use the correct techniques always use different ingredients to spicy up your benedicts like avocado, jalapenos, crab or other seafood instead of the bacon, just simply use your imagination and enjoy. This is great for you upper class people who are really into those types of foods. Hope you like it. I just want a piece of bacon, or five, next to two scrambled eggs and a piece of wonder bread.
